Who doesnt love Mangoes? This Mango Malai Cake is a must try in this mango season. The Mango Malai Cake is eggless, super soft and has a layer of mango malai spread on top, which enhances the flavour of this Mango Cake. I have used Alphonso Mangoes in this recipe. Alphonso Mangoes give a very nice flavour and colour to this Eggless Mango Cake. If you do not have Alphonso Mangoes, you can also use any other mango variety. 0:00 Introduction 0:25 Make Eggless Cake 1:45 Make Mango Puree 2:11 Soak Cake with Mango Milk 2:54 Make Mango Malai 3:28 Garnish Cake 5:17 Like and Subscribe Ingredients Alphonso Mangoes - 2 Curd/Yogurt - 1/2 cup Refined Oil - 1/2 cup Condensed Milk - 3/4 cup All Purpose Flour - 1.5 cup Baking Powder - 1 tsp Baking Soda - 1/2 tsp Milk - 1/2 cup Vanilla Extract - 1 tsp Mango Puree - 3 tbsp + 1/2 cup Milk - 1.5 cup Condensed Milk - 1/2 cup Chopped Nuts for Garnish Chopped Mango Cubes for Garnish Preparation To make the eggless cake: Whisk together the wet ingredients - curd, refined oil and condensed milk. Sift together the dry ingredients - all purpose flour, baking powder, baking soda. Incorporate the dry ingredients into the wet mixture and mix well. Add some milk to loosen the batter. Also add vanilla extract. Transfer the cake batter to a baking tray greased with oil or melted butter. Preheat the oven to 180 deg centigrade and bake the cake for about 30 to 35 minutes or until a tooth pick comes out clean. Once the cake comes down to room temperature, prick the top of the cake with a fork. Add some mango puree to milk and mix well. Pour the milk mixture on top of the cake. Refrigerate the cake for 30 minutes until the cake absorbs the milk completely. To make the Mango Malai: Pour milk into a pan. Also add condensed milk. Once the milk comes to boil and the cream starts collecting on the sides, add mango puree. Mix well until mango puree dissolves completely. Cook further until the mixture thickens and turn off the flame. Allow the mixture to cool down completely. For Garnish: Spread the mango malai on top of the cake and spread evenly. Garnish with chopped nuts and dry rose petals. Also top it up with some chopped mango pieces. The Eggless Mango Malai cake is now ready to be served. The cake tastes best when served chilled.
