This is a popular Chinese starter recipe, wherein crispy fried chicken is served along with creamy mayo sauce on a bed of lettuce leaves. Ingredients Boneless Chicken Pieces - 300 gms Red Chilli Powder/Paprika - 1 tbsp Salt - 1/2 tsp Oregano/Mixed Herbs - 1 tsp Garlic Paste - 1 tsp Dark Soya Sauce - 2 tsp Egg - 1 All Purpose Flour/Maida - 1/2 cup Cornflour/Cornstarch - 1/2 cup Black Pepper Powder - 1/2 tsp Salt - 1/4 tsp Plain Mayonnaise - 3/4 cup Red Chilli Sauce - 2 to 4 tbsp Tomato Ketchup - 2 tbsp Salt - 1/4 tsp Garlic Paste - 1 tsp Honey - 1 tbsp Oil - for frying Spring Onion Greens - for garnish Lettuce Leaves Preparation First step is to marinate the chicken. Into a bowl, add in red chilli powder, salt, oregano, garlic paste, dark soya sauce and egg. Whisk until well combined. Add the chicken pieces to this and coat them well. Refrigerate for 30 minutes. Into a separate bowl, add in all purpose flour, corn flour, black pepper powder and salt. Mix well and set it aside. We will use this to coat the chicken before frying. To prepare the sauce, add mayonnaise, red chilli sauce, tomato ketchup, salt, garlic paste and honey into a bowl. Mix well. Check the spice and add more of red chilli sauce if required. After 30 minutes, remove the chicken from the refrigerator. Coat each chicken piece with the flour mixture, dust off the excess and set aside. Repeat the same with the remaining chicken pieces. To fry the chicken heat some oil in a pan. Once the oil turns hot, drop in the chicken pieces one by one. Set the flame to medium and fry the chicken pieces until they are well cooked and crispy on the outside. It should take roughly around 4 to 5 minutes. Once done, remove the chicken pieces onto a kitchen towel tp get rid of the excess oil. Pour the mayo sauce on top of the fried chicken and coat them well with the sauce. Dynamite Chicken is now ready. Transfer the prepared chicken onto a bed of lettuce leaves and garnish with some chopped spring onion greens. Serve the dynamite chicken while the chicken is still crisp and enjoy the flavour of the mayo sauce along with some fresh lettuce. Do try this and let me know your feedback in the comments section.
