Maddur Vada is a very popular snack which is very unique to the state of Karnataka. This is an all time favorite snack and ideal with a hot cup of tea or coffee. The name comes from the the town Maddur, which is located between the cities of Bangalore and Mysore.
Ingredients:
- All purpose flour - 1 cup
- Rice flour - 1/2 cup
- Semolina - 1/2 cup
- Clarified Butter/Ghee - 1 tbsp
- Chopped Onion - 1 medium
- Finely chopped Ginger - 1 tsp
- Finely chopped green chilli - 3 to 4
- Chopped curry leaves - 1/4 cup
- Chopped Coriander leaves - 1/4 cup
- Asoefatida/Hing - 1 pinch
- Salt - to taste
- Water - to make the dough
- Oil - for frying
Preparation:
- Take a bowl. Add in the 2 flours and semolina. Mix well.
- Add ghee to this and crumble the mixture.
- Now add chopped onion and ginger to this.
- Add chopped curry leaves and coriander leaves.
- Add hing and salt. Do not add too much salt.
- Mix all these well and add water and make a stiff dough out of it. Do not add more water.
- Rest the dough for about 15 minutes. The onion then oozes out the moisture and the semolina, which is dry will absorb the moisture and the dough becomes soft.
- After 15 minutes, divide the dough into equal portions.
- Place each portion between 2 plastic sheets and press to form vadas of 3 inch diameter. Aply some oil on the plastic sheet so that the dough does not stick to the plastic and can be easily removed.
- Heat the oil. Fry the maddur vadas in moderately hot oil on both sides until they turn golden brown and float on top.
- Remove from oil and place them on a kitchen towel to remove the excess oil.
