Brocolli Cutlet



Ingredients:

  1. Finely Chopped Brocolli - 1/2 cup
  2. Boiled and mashed potato - 1 cup
  3. Chopped Onion - 1 cup
  4. Ginger garlic paste - 1 tbsp
  5. Chopped green chillies - 3 nos.
  6. Jeera - 1/2 tsp
  7. Oil - for shallow frying
  8. Salt - to taste
  9. Turmeric powder - 1/2 tsp
  10. Garam Masala - 1 tsp
  11. Chopped coriander leaves - 1/4 cup
  12. Grated paneer - 1/4 cup
  13. Bread crumbs - for coating the cutlet
  14. Maida batter - for coating the cutlet
  15. Asafoetida - 1/3 tsp

Preparation:
  1. Heat 2 tbsp of oil in a pan.
  2. Add jeera and wait until it splutters.
  3. Add chopped onion and fry well.
  4. Add asafoetida to this.
  5. Add the ginger garlic paste and fry until the raw smell is gone.
  6. Add chopped green chillies and mix.
  7. Add chopped brocolli and saute for 2 to 3 minutes.
  8. Once the onion turns golden brown, add turmeric, salt, garam masala and mix well.
  9. Cook and cook for a min or two until the onion is cooked.
  10. Add grated paneer and cook for a minute.
  11. Add the mashed potato and mix well.
  12. Finally add chopped coriander leaves and remove from flame.
  13. Once the mixture has cooled down, make equal portions of the mixture and shape them into cutlets. You can use a heart-shaped cookie cutter to give the cutlets the desired shape.
  14. Make a thin batter out of maida and water. 
  15. Dip each cutlet in the batter and coat with breadcrumbs.
  16. Heat oil in a pan. Shallow fry each of the cutlets on both sides on a low flame until golden brown.
  17. Repeat the same with the remaining cutlets until all are done.
  18. Serve hot with tomato ketchup.
