Appam


Ingredients:

  1. Raw rice - 1 cup
  2. Grated coconut - 3/4 cup
  3. Cooked rice- 1/2 cup
  4. Coconut water - 1/2 cup
  5. Water - for grinding
  6. Salt - to taste
  7. Yeast - 1/4 tsp
Preparation:
  1. Soak the rice for 6 hours.
  2. Now combine the rice, coconut, cooked rice, coconut water in a mixer grinder and grind to a fine paste. if required add some water, but the batter should be slightly thicker than that of dosa.
  3. Soak the yeast in warm water and keep aside for 5 mins.
  4. Add the yeast and the water to the batter and mix well.
  5. Set the batter aside overnight for it to rise.
  6. When about to prepare appam, add salt to taste and mix well.
  7. Place the appam pan on the flame. when it becomes slightly hot, pour 1 big spoon of the batter and rotato to make a circle.
  8. Cover with a lid and cook for 2 minutes. You will notice small holes all around once it is done.
  9. Repeat the same process and make more appams.
  10. Server hot with channa curry/potato stew/chicken curry etc.
