Yardlong Beans Fry - Kerala Style


Ingredients:

  • Yardlong beans - 15 to 20 nos.
  • Sliced onion - 1 medium (can also use sliced shallots)
  • Slit green chillies - 2 to 3 nos.
  • Coconut oil - 2 to 3 tbsp
  • Water - 100ml
  • Salt - to taste

Preparation:
  • Heat oil in a pan.
  • Add sliced onion, slit green chillies and yardlong beans.
  • Add salt and saute.
  • And water and mix well.
  • Cover with a lid and cook while stirring occasionally. Make sure that the green colour is intact.
  • When it is almost 60% done, remove the lid, add coconut oil and mix.
  • Allow it to fry for some time. Saute occasionally.
  • Remove from flame and serve hot with rice.
