Mixed Veg Paneer Subzi




Ingredients:
  • Carrot - 1 no. (chopped cubes)
  • Beans - 10 nos. (chopped)
  • Cauliflower - small florets  - 15 nos.
  • Baby corn - small round pieces- 2 nos.
  • Capsicum - small cubes - 1no.
  • Potato - small cubes - 1 no.
  • Tomato - small cubes - 1 no.
  • Onion - chopped - 1 cup
  • Ginger-garlic paste - 1 tsp
  • Green chilli - chopped - 2 nos.
  • Coriander powder - 1tsp
  • Turmeric powder - 1 tsp
  • Paneer cubes - 15 nos.
  • Kasuri methi - 1 tsp.
  • Coriander leaves - chopped
  • Garam Masala - 1 tsp (preferable MDH Kitchen King)
  • Jeera - 1 tsp
  • Oil - tsp
  • Salt - to taste

Preparation:
  • Heat oil in a kadhai.
  • Add jeera and allow it to splutter.
  • Add chopped onion and fry.
  • Add ginger-garlic paste and fry.
  • Add salt, turmeic powder, coriander powder, green chilli and fry.
  • Add all the chopped vegetables.
  • After adding the vegetables, cover with lid and cook on low flame.
  • When done, add tomatoes and paneer and cook, till tomatoes become soft.
  • Add kasuri methi, garam masala and mix.
  • Garnish with chopped coriander leaves and mix.
  • Remove from flame and server hot with chapattis/rotis.
