Ingredients: (for a medium sized cake)
- maida - 1 cup
- sugar - 1 cup
- butter - 3/4 cup (brought to room temperature)
- baking powder - 1 tsp
- egg - 3
- sugar (for caramelising) - 2 tbsp
- vanilla extract - 1 tsp
- dry fruits - kismis, cashew, dry cherries
Preparation:
- Powder the sugar in a mixer grinder.
- Sieve together maida, powdered sugar and baking powder several times, so that the mixture is even throughout.
- Beat the eggs well using a blender or mixer.
- Keep adding small quantities of the maida mixture to this and keep mixing, until all is done.
- Add the butter, caramelised sugar and vanilla extract to this and mix well.
- Take a baking pan and grease it with butter.
- Pour the cake mixture in to this.
- Coat the dry fruits with little maida and put this evenly into the mixture.
- Preheat the oven between 180 to 200 degree C.
- Place the cake mixture in the oven and bake till done.
- Insert a toothpick or any other to check if the cake is done, by inserting it into the cake. The toothpick should come out clean.
To caramelize the sugar:
- Add 2 tbsp of sugar into a pan and heat it on a low flame, until it melts and turns to golden brown (or until the colour that you wish to add for your cake).
- Add little water and remove from flame.
