Eggless Mini Red Velvet Cakes | Valentines Day Special Recipe Video

Today we have a special recipe for the Valentine’s Day!!!
Mini Red Velvet Cakes with creamcheese and butter frosting!!!
These are eggless, easy to make, tastes delicious and look super cute!!!

Ingredients
All Purpose Flour – 1 cup
Powdered Sugar – ¾ cup
Unsweetened Cocoa Powder – 2.5 tbsp
Baking Powder – 1 tsp
Baking Soda – ¼ tsp
Vanilla Extract – 1 tsp
Vegetable Oil – 1 cup
Butter Milk – 1 cup
Red Food Gel Color – 1 tbsp
White Vinegar – ½ tbsp
Cream cheese – 200 gms
Unsalted Butter – 150 gms
Powdered Sugar/Icing Sugar – 300 gms
Vanilla Extract – 1 tsp

Preparation
Sift together all purpose flour, powdered sugar, cocoa powder, baking powder and baking soda.
To this, add vegetable oil, butter milk, vanilla extract, red food gel color and white vinegar.
Mix everything really well.
Grease a baking pan with melted butter and line with parchment paper.
Pour the cake batter into the baking pan.
Preheat the oven to 180 degree centigrade and bake the cake for about 30 minutes or until a toothpick inserted comes out clean.
Remove from the oven and place on a wire rack. Allow to cool down completely.
Use a round cookie cutter to cut out round shapes and set it aside.
To prepare the frosting, add creamcheese to a bowl.
Start whisking it using an electric beater until it becomes creamy.
Add unsalted butter at room temperature and whisk again until creamy.
Add vanilla extract and mix it.
Now add powdered sugar in small batches and whisk it, until it all comes together.
Fill a piping bag fitted with open star nozzle with the frosting.
The cake slices and frosting is now ready. Next step is to assemble them.
Place a slice of cake on a serving tray.
Start piping small blobs using the frosting. Push out small quantities and pull up the nozzle.
Now place one more slice on top and pipe out the blobs again.
Repeat the same with the remaining cake slices.
Finally Garnish with some sprinkles of your choice..
Mini Red Velvet Cakes are ready!!! Keep them refrigerated until ready to be served.
