Chocolate Strawberry Cupcakes - New Year's Eve Party Dessert Recipe Video

Today's recipe is Chocolate and Strawberry cupcakes which are super moist and delicious to taste. Make these cupcakes during this New Year and surprise your guests!!

Ingredients
Chocolate Cupcakes
1. All-purpose flour – 1 cup
2. Cocoa Powder – ¼ cup
3. Baking Powder – ¾ tsp
4. Baking Soda – ½ tsp
5. Vanilla Extract – 1 tsp
6. Powdered Sugar – ½ cup
7. Brown Sugar – ½ cup
8. Vegetable Oil – ½ cup
9. Salt – 1 pinch
10. Egg – 1
11. Milk – ½ cup

Strawberry Puree
1. Fresh Strawberries – 200gm
2. Sugar – ¼ cup
3. Lemon Juice – 1 tbsp
4. Cornstarch – 1.5 tsp

Buttercream Frosting
1. Unsalted Butter – 1 cup (250gm) - at room temperature
2. Icing Sugar/Castor Sugar – 350 gm
3. Milk/Whipping Cream – 2 tbsp
4. Strawberry Essence – 2 to 3 drops
5. Red Food Colour – 2 drops (optional)

Preparation/Instructions
Chocolate Cupcakes
1. Sift together all-purpose flour, cocoa powder, powdered sugar, brown sugar, salt, baking powder, baking soda. Mix well and set it aside.
2. In a separate bowl, beat an egg at room temperature. To this, add milk, vegetable oil and vanilla extract. Whisk well.
3. Add the dry ingredients in small batches to the wet ingredients and mix until you get a smooth flowing consistency.
4. Line a muffin mould with cupcake liners. Pour the cupcake batter until it reaches 3/4th of each of the cupcake liners.
5. Preheat the oven to 180 degree centigrade and bake the cupcakes for about 18 to 20 mins or until a toothpick inserted comes out clean.
6. Remove from the oven and cool on a wire rack.

Strawberry Puree
1. Cut the strawberries into small chunks.
2. Transfer this to a sauce pan. To this, add sugar, lemon juice and cornstarch.
3. Now cook this on a medium heat by stirring occasionally.
4. Cook until the strawberries turn soft.
5. Now mash them using a spatula or a hand blender.
6. Pass this through a sieve to remove the seeds.
7. Strawberry puree is ready. Refrigerate until it cools down completely.

Buttercream Frosting
1. Take unsalted butter at room temperature and start whisking it. Whisk until it becomes pale and creamy. It should take around 5 minutes.
2. Add icing sugar/castor sugar in small batches and whisk well.
3. Add chilled milk or whipping cream and blend again.
4. Add few drops of strawberry essence to this, to give it a nice flavor.
5. Once you are done with adding all of the icing sugar, add the strawberry puree and blend well.
6. Thick and creaming frosting is ready.
7. Fill a piping bag with a star nozzle with this frosting

Frosting and Garnish
1. Remove the cupcakes from the mould and place them on a wire rack, so that it is easy to frost them.
2. Start frosting each of the cupcakes in the form of a rose. Do the same with all the cupcakes.
3. Finally garnish them using some dark chocolate chips.

Chocolate and Strawberry Cupcakes are ready to be served. Store them inside an air tight container.
