This recipe makes 8 cutlets

Ingredients
Oil - 3 tbsp
Chopped Onion - 2 Big
Ginger Garlic Paste - 1 tbsp
Chopped Green Chilli - 4 to 5
Salt - 3/4 tsp
Turmeric Powder - 1/2 tsp
Red Chilli Powder - 1 tsp
Fennel powder - 1/2 tsp
Black Pepper powder - 3/4 tsp
Garam Masala - 3/4 tsp
Chopped Coriander leaves - 1/2 cup
Chopped Curry Leaves - 1/2 cup
Water - 2 tbsp
Boiled Potato - 2 medium
Boneless Chicken (Minced) - 200 gm
Egg - 1
Breadcrumbs - 1/2 cup
Oil for frying

Preparation:
Pressure cook the potatoes along with some salt, turmeric and water for 3 to 4 whistles or until it gets cooked.Peel the skin, mash them and keep aside.
To make the minced chicken, pressure cook the boneless chicken along with some salt, turmeric, black pepper powder, fennel powder and some water for 2 to 3 whistles. Remove and drain out the excess water. Add the cooked chicken to a mixer jar and churn it just once. Your minced chicken is ready. Set it aside.
For preparing the garam masala, i have used cinnamon, cloves and green cardamom. You could use any spices that you like.
Heat oil in a pan. Add ginger garlic paste and fry until it turns slightly brown and the raw smell goes away.
Add chopped onions to this and little salt and fry until it turns soft and slightly changes colour. Add less salt, since we have added salt while cooking the potato and chicken.
Add chopped green chillies and saute.
Add turmeric powder, red chilli powder, fennel powder, black pepper powder, garam masala and saute.
Add coriander leaves and curry leaves and saute for a minute. Add little water. Cover and cook for a minute until the leaves turn soft.
Add minced chicken to this and mix well.
Add mashed potato and combine all the ingredients really well.
At this stage, you can check the salt. If it is less, you can add some more, as per your taste.
Cool this mixture completely.
Take small portions of this mixture, roll and flatten it between your palms and give it a nice shape. Make similar patties with the rest of the mixture.
Beat an egg and dip each of these in egg and then coat them with breadcrumbs.
Heat oil in a separate pan and shallow fry the patties on a medium flame until they turn golden brown on both the sides.
Remove on to a kitchen towel to drain out the excess oil.
Your chicken cutlets are ready!!!

You can have it as is or along with some ketchup!!! It is a perfect snack and my all time favourite.
