Homemade Malpua Recipe | Holi Special Recipe


Today's recipe is a dessert called Malpua. Malpua is a traditional Indian dessert which is enjoyed during most of the festivals like Holi, Diwali etc. It is a pancake like dessert which is fried in ghee/oil and dipped in sugar syrup. You can also enjoy this with Rabdi.

Ingredients
Batter
  1. All purpose flour – ½ cup
  2. Semolina – ¼ cup
  3. Fennel Powder – 1/2 tsp
  4. Sugar – 2 tbsp
  5. Milk – ½ cup
  6. Water – ¼ cup or as required


Sugar Syrup
  1. Sugar – 1 cup
  2. Water – ½ cup
  3. Cardamom Powder – ¼ tsp
  4. Saffron Strands – few


Oil/Ghee – for frying
Sliced Almonds and Pista for Garnish

Preparation:
  1. Take a bowl
  2. Add all purpose flour, semolina, fennel powder and sugar
  3. Mix well
  4. Add milk and mix well until there are no lumps.
  5. Add some water if required. The batter should match the dosa batter consistency.
  6. Whisk well for sometime and set aside for 30 minutes.
  7. In a separate pan, add sugar and water to prepare the sugar syrup.
  8. When the sugar melts and water starts to boil, add cardamom powder and the saffron strands.
  9. Simmer and allow to boil for 8 to 10 minutes. Reduce the syrup to one string consistency.
  10. To check the right consistency, take a drop of it onto a spoon. When the syrup on the spoon cools down a little, take it between your fingers and see if a single thread is formed when you pull the fingers apart.
  11. Remove and set aside to cool.
  12. Heat oil or ghee in a big pan.
  13. Once the oil becomes hot, reduce the flame to a medium.
  14. Take one spoon if the batter and pour in the centre of the pan.
  15. Cook on a medium flame on both sides until golden brown.
  16. Once done, remove and put the malpua in the sugar syrup.
  17. Repeat the same with the rest of the batter.
  18. Leave the malpuas in the sugar syrup for around 10 minutes, so that they get soaked with the sugar syrup.
  19. Remove on to a serving tray.
  20. Garnish with some chopped almonds and pistas. You can also add few saffron strands on top.
Yummy Malpua is ready!!
Tip:
Add ½ tsp of lemon juice to the sugar syrup to prevent it from crystallizing when cold.
