Chocolate Crinkle Cookies


This Chocolate Crinkle Cookies recipe is perfect for all the chocolate loving people out there.
Makes – 22 to 24 cookies

Ingredients
  1. Cocoa Powder – ½ cup
  2. Powdered Sugar – 1 cup
  3. Vegetable Oil – ¼ cup
  4. Eggs – 2
  5. Vanilla Extract -  1 tsp
  6. All purpose flour – 1 cup
  7. Baking Powder  - 1 tsp
  8. Salt – ¼ tsp
  9. Confectionary/Powdered Sugar – ½ cup (for coating the cookies)



Preparation:
  1. Take a large bowl. Add cocoa powder, powdered sugar, vegetable oil and mix well.
  2. Using an electric mixer, beat in the eggs, one at a time.
  3. Add the vanilla extract and mix well.
  4. In a separate bowl, mix together all the dry ingredients (all-purpose flour, baking powder and salt) and stir this together to combine.
  5. Put the dry ingredients into the cocoa mixture and stir until fully mixed.
  6. Cover the cookie dough with a cling wrap and refrigerate for atleast 4 hours or even overnight. This helps the cookies get their crinkled appearance once baked.
  7. Preheat the oven to 180 degree Celsius (350 degrees Fahrenheit).
  8. Once the dough has chilled, roll the dough out into 1 inch round balls.
  9. Coat each ball in confectionary sugar and arrange them on a baking tray lined up with parchment paper. Place the sugar coated balls atleast one inch apart.
  10. Bake them in the pre-heated oven for 10 to 12 minutes and then allow to cool them on the baking sheets for 5 more minutes.
  11. Then transfer the cookies onto a wired rack and allow them cool down completely.

NOTE: The cookies can be stored for upto 5 days. The cookie dough itself can be refrigerated for upto 3 months and used.
