Maddur Vada


Maddur Vada is a very popular snack which is very unique to the state of Karnataka. This is an all time favorite snack and ideal with a hot cup of tea or coffee. The name comes from the the town Maddur, which is located between the cities of Bangalore and Mysore.

Ingredients:
  1. All purpose flour - 1 cup
  2. Rice flour - 1/2 cup
  3. Semolina - 1/2 cup
  4. Clarified Butter/Ghee - 1 tbsp
  5. Chopped Onion - 1 medium
  6. Finely chopped Ginger - 1 tsp
  7. Finely chopped green chilli - 3 to 4
  8. Chopped curry leaves - 1/4 cup
  9. Chopped Coriander leaves - 1/4 cup
  10. Asoefatida/Hing - 1 pinch
  11. Salt - to taste
  12. Water - to make the dough
  13. Oil - for frying

Preparation:
  1. Take a bowl. Add in the 2 flours and semolina. Mix well.
  2. Add ghee to this and crumble the mixture.
  3. Now add chopped onion and ginger to this.
  4. Add chopped curry leaves and coriander leaves.
  5. Add hing and salt. Do not add too much salt.
  6. Mix all these well and add water and make a stiff dough out of it. Do not add more water.
  7. Rest the dough for about 15 minutes. The onion then oozes out the moisture and the semolina, which is dry will absorb the moisture and the dough becomes soft.
  8. After 15 minutes, divide the dough into equal portions.
  9. Place each portion between 2 plastic sheets and press to form vadas of 3 inch diameter. Aply some oil on the plastic sheet so that the dough does not stick to the plastic and can be easily removed.
  10. Heat the oil. Fry the maddur vadas in moderately hot oil on both sides until they turn golden brown and float on top.
  11. Remove from oil and place them on a kitchen towel to remove the excess oil.

Hot and Crispy Maddur Vadas are ready to be served with coconut chutney!!
