Tomato Egg Burji


Ingredients:

  1. Eggs - 2 nos.
  2. Chopped onion - 1 no.
  3. Chopped green chillies - 2 to 3
  4. Sliced tomato - 1 no.
  5. Curry leaves - 5 to 10
  6. Chopped coriander leaves - 1 tbsp
  7. Oil - 2 to 3 tbsp
  8. Grated coconut - 2 tbsp (optional)
  9. Mustard seeds - 1 tsp
  10. Salt - 1/2 tsp or to taste
Preparation:
  1. Heat oil in a pan. Add mustard seeds and wait until it crackles.
  2. Add the chopped onion, curry leaves, green chilli and fry well until it turns light brown.
  3. Now add the chopped tomatoes and cook until its done.
  4. Add the grated coconut and mix well.
  5. Now add the eggs and fry on a medium flame until it forms burji.
  6. Garnish with chopped coriander leaves.
  7. Server hot with roti or chappati.
