Ingredients:
- Eggs - 2 nos.
- Chopped onion - 1 no.
- Chopped green chillies - 2 to 3
- Sliced tomato - 1 no.
- Curry leaves - 5 to 10
- Chopped coriander leaves - 1 tbsp
- Oil - 2 to 3 tbsp
- Grated coconut - 2 tbsp (optional)
- Mustard seeds - 1 tsp
- Salt - 1/2 tsp or to taste
Preparation:
- Heat oil in a pan. Add mustard seeds and wait until it crackles.
- Add the chopped onion, curry leaves, green chilli and fry well until it turns light brown.
- Now add the chopped tomatoes and cook until its done.
- Add the grated coconut and mix well.
- Now add the eggs and fry on a medium flame until it forms burji.
- Garnish with chopped coriander leaves.
- Server hot with roti or chappati.
