Ingredients:
- Minced Chicken - 200gm
- Finely chopped onion - 2 medium no.
- Mashed boiled potato - 2 medium no.
- Ginger garlic paste - 1 tbsp
- Turmeric powder - 1 tsp
- Red chilli powder - 1 tsp
- Chopped green chillies - 4 to 5 nos.
- Chopped curry leaves - 1/2 cup
- Chopped coriander leaves - 1/2 cup
- Chicken Masala Powder - 1 tsp (i have used Eastern Chicken Masala)
- Fennel seeds powder - 1 tsp
- Black pepper powder - 1 tsp
- Garam Masala Powder - 1 tsp (green cardamom, cloves and cinnamon)
- Salt - to taste
- Bread crumb powder - 1 cup
- Egg - 2 nos.
- Oil - for shallow frying
Preparation:
For Minced Chicken:
- Wash and clean the chicken, preferably boneless pieces.
- Pressure cook the chicken pieces for 3 to 4 whistles along with some turmeric powder, red chilli powder, fennel seeds powder, black pepper powder and chicken masala powder.
- Once done, mince them in a mixer grinder.
For the Cutlet:
- Heat oil in a pan.
- Add chopped onion and fry.
- Add required amount of salt.
- Add ginger garlic paste and fry till raw taste goes off.
- Add chopped green chillies and saute.
- Once the onions turn light brown, add turmeric/chilli/fennel seeds/black pepper/chicken masala/garam masala powders and saute well.
- Add chopped curry leaves and coriander leaves and cover with a lid and cook for 2 mins.Remove from flame.
- Add the mashed potato and minced chicken to this mixture and mix everything well.
- Take small portions of this mixture and make small patties out of it.
- Dip them one by one first in beaten egg and roll over the breadcrumb powder.
For Frying:
- Pour little oil in a pan or tawa and place the cutlets.
- Allow it to turn golden brown on one side.
- Repeat the same for the other side as well. Need not overdo it, since the chicken and other ingredients are already cooked.
- Remove from flame and serve hot.
