Ingredients:
- Cooked Rice- 2 cups
- Sliced Onion - 1 big
- Slit Green Chillies - 3 to 4 nos.
- Turmeric powder - 1 tsp
- Curry Leaves - 2 sticks
- Groundnuts - 10 to 15 nos.
- Lemon Juice - 1 small
- Mustard- 1 tsp
- Oil - 2 to 3 tbsp
Preparation:
- Heat oil in a pan.
- Add the groundnuts and fry till light brown. Remove from oil and keep aside.
- In the remaining oil, add mustard seeds and wait till it splutters.
- Add the curry leaves.
- Add the Onion and fry till translucent. Add some salt so that the onion gets cooked.
- Add slit green chillies.
- Add turmeric powder and mix well.
- Add the lemon juice and remove from flame. When the lime juice is added, the onion turns light pink in colour.
- Add the cooked rice.
- Add required salt and mix well.
- Mix the fried groundnuts and serve.
- If required, garnish using coriander leaves.
