Lemon Rice



Ingredients:

  • Cooked Rice- 2 cups
  • Sliced Onion - 1 big
  • Slit Green Chillies - 3 to 4 nos.
  • Turmeric powder - 1 tsp
  • Curry Leaves - 2 sticks
  • Groundnuts - 10 to 15 nos.
  • Lemon Juice - 1 small
  • Mustard- 1 tsp
  • Oil - 2  to 3 tbsp

Preparation:
  • Heat oil in a pan. 
  • Add the groundnuts and fry till light brown. Remove from oil and keep aside.
  • In the remaining oil, add mustard seeds and wait till it splutters.
  • Add the curry leaves.
  • Add the Onion and fry till translucent. Add some salt so that the onion gets cooked.
  • Add slit green chillies.
  • Add turmeric powder and mix well.
  • Add the lemon juice and remove from flame. When the lime juice is added, the onion turns light pink in colour.
  • Add the cooked rice.
  • Add required salt and mix well.
  • Mix the fried groundnuts and serve.
  • If required, garnish using coriander leaves.
