Christmas without Cakes…. And that too a Plum Cake!!!
Today lets
see how to make an Instant Christmas Plum Cake without using Wine or Alcohol..
Step 1 –
Caramelize Sugar (Ingredients)
- Sugar – ½ cup
- Boiling Water – ½ cup
- Add sugar to a thick base pan and heat on a medium flame.
- When the bubbles start forming, pay attention as it might start changing its colour.
- Once the colour has turned golden brown, add the boiling water.
- Stir continuously to remove any crystals.
- Remove from flame and allow to cool down completely.
Step 2 –
Preparing the Dry Fruits Mix (Ingredients)
- Chopped Dry Fruits of your choice – 1 cup (Black Grapes, Figs, Tutty Fruity)
- Chopped Nuts - - ½ cup (cashews, pistachios)
- Orange Juice – ½ cup
- Honey – 1 tbsp
- Soak the nuts and fruits in Orange juice and Honey for almost 45 minutes.
- Transfer this mixture to a pan and cook on a medium flame, until the juices get completely absorbed and the mixture becomes dry.
- Remove onto a plate and allow to cool down completely.
Step 3 – Prepare
the Spice Mix - Powder each
of them separately
- Dry Ginger – 2 to 3 pinch
- Nutmeg Powder – 2 pinch
- Cloves – ½ tsp
- Green Cardamom – 2 to 3 pinch
- Cinnamon – ¼ tsp
Step 4 –
Preparing the Wet Ingredients Mix
- Unsalted Butter (at room temp) – 150 gm
- Eggs (at room temp) – 3
- Powdered Sugar – ¾ cup
- Vanilla Extract – 1 tsp
- Orange Zest – 1 tbsp
- Add butter to a large bowl and beat until it becomes creamy.
- Add the powdered sugar gradually and beat well until the mixture becomes fluffy.
- Add the eggs one at a time and mix well.
- Now add the vanilla extract and orange zest and mix well.
Step 4 –
Preparing the Dry Ingredients Mix
- All purpose flour – 1 cup
- Ground Spice Mix (Step 3 above)
- Baking Powder – 1 tsp
- Salt – ¼ tsp
- Sieve together all the dry ingredients couple of times. Mix well until it is all well combined.
Final Steps:
- Add the caramel syrup little at a time to the wet mixture and mix well with a spatula.
- Add some of the flour mix to the dry fruits mixture and coat them evenly so that the dry fruits do not sink to the bottom and stay where they are.
- Now gradually add the remaining dry flour mix to the wet mixture and gently fold with the help of a spatula.
- Add the dry fruits and give it a final mix.
- Add more caramel syrup if required.
- Grease a baking mould with some melted butter.
- Transfer the cake batter to the baking mould and spread evenly. Tap the mould couple of times so that any trapped air bubbles would escape.
- Preheat the oven to 180 degree centigrade and bake the cake for almost 40 minutes or until a toothpick inserted comes out clean.
- Once baked, allow the cake to cool down completely.
- Prepare a thick white glaze with some powdered sugar and milk. Pour this glaze uniformly on top of the cake.
- Finally garnish with some fruits of your choice..
