Blueberry Pie Bites


Ingredients:

  1. Pastry Dough - to make 2 sheets of 9 inch diameter
  2. Blueberry/Strawberry Jam - 1/2 cup
  3. Egg - 1
  4. Icing Sugar - 1/2 cup
  5. Milk - 2 tablespoon

Preparation:
  1. Preheat the oven to 180 degree centigrade.

  3. Divide the dough into 2 portions. Using a rolling pin, flatten out each portion into 9 inch circles. Dont roll them thinner.
  4. Use a heart shaped cookie cutter to cut out equal number of hearts from each of the pie crusts.
  5. Place half of the hearts on a tray lined with parchment paper.
  6. Place a generous amount of the blueberry/strawberry jam in the middle of each heart.
  7. Beat the egg well and apply a thin layer around the edges of the heart around the jam.
  8. Now place another heart on top of the jam and gently press down the edges with your fingers and seal it. Repeat the same with the remaining ones.
  9. Using a fork, press down the edges to seal them all in and to give a nice texture around the hearts.
  10. Brush the egg mixture on top of each of the hearts.
  11. Bake them at 180 degree centigrade for around 25 minutes.
  12. Remove from the oven and place on a cooling rack.
  13. As an optional step, you could add some glaze on top of the hearts using icing sugar and milk. Mix 1/2 cup icing sugar  in 2 tablespoons of milk and mix well to get a smooth, sligthly runny consistency. Drizzle over the hearts while they are still warm.
