Ingredients:
- Honey - 1/4 cup
- Pear fruit - 3 big nos.
- Sugar - 1 cup
- Egg - 2 big
- Vanilla Essence - 1 tbsp
- Maida - 1 cup
- Salt - 1 pinch
- Butter - 1/2 cup + 1 tbsp (melted and cooled down)
- Badam- 1/4 cup (sliced)
- Lemon zest - of 1 lemon
- Baking powder - 1 tsp
Preparation:
- Take a baking pan (preferably around 9 inch diameter). Pour the honey into it and bring it to boil on a low flame. Boil the honey for around 6 to 10 minutes until it gets caramelised and changes colour. Once the colour changes, remove from the stove .
- Peel the pear fruits and cut each pear into 2 half and slice them into long strips. Place the pear slices on top of the caramelised honey adjacent to each other, to form a circle.
- Place this again on stove on a low flame and boil until the pear turns brown. Now turn the slices upside down so that the other side gets cooked and turns brown.
- Preheat the oven to 175 degree celsius.
- Place the baking pan along with the pear slices and roast them for 25 minutes until they become soft.
- Take another mixing bowl. Add sugar and lemon zest and beat well.
- Add the eggs and vanilla essence and beat well.
- Mix maida, salt and baking powder together in a separate bowl. Add this to the egg mixture little by little and mix well.
- Add the melted butter to this and mix well.
- Now add this mixture on top of the pear slices and spread evenly.Now add the badam slices on top .
- Place the baking pan back into the oven and bake for 25-30 minutes.
- Insert a toothpick to check if its baked well.
- Once removed from the oven, allow the cake to cool down in the same tray for 30 minutes.
- After that take a plate and place the baking pan upside down onto the plate and tap very slowly so that the cake gets transferred to the plate.
- The pear slices will be all on top as seen in the picture.
