Pear Upside Down Cake


Ingredients:

  1. Honey - 1/4 cup
  2. Pear fruit - 3 big nos.
  3. Sugar - 1 cup
  4. Egg - 2 big
  5. Vanilla Essence - 1 tbsp
  6. Maida - 1 cup
  7. Salt - 1 pinch
  8. Butter - 1/2 cup + 1 tbsp (melted and cooled down)
  9. Badam- 1/4 cup (sliced)
  10. Lemon zest - of 1 lemon
  11. Baking powder - 1 tsp


Preparation:

  1. Take a baking pan (preferably around 9 inch diameter). Pour the honey into it and bring it to boil on a low flame. Boil the honey for around 6 to 10 minutes until it gets caramelised  and changes colour. Once the colour changes, remove from the stove .
  2. Peel the pear fruits and cut each pear into 2 half and slice them into long strips. Place the pear slices on top of the caramelised honey adjacent to each other, to form a circle.
  3. Place this again on stove on a low flame and boil until the pear turns brown. Now turn the slices upside down so that the other side gets cooked and turns brown.
  4. Preheat the oven to 175 degree celsius.
  5. Place the baking pan along with the pear slices and roast them for 25 minutes until they become soft.
  6. Take another mixing bowl. Add sugar and lemon zest and beat well.
  7. Add the eggs and vanilla essence and beat well.
  8. Mix maida, salt and baking powder together in a separate bowl. Add this to the egg mixture little by little and mix well.
  9. Add the melted butter to this and mix well.
  10. Now add this mixture on top of the pear slices and spread evenly.Now add the badam slices on top .
  11. Place the baking pan back into the oven and bake for 25-30 minutes.
  12. Insert a toothpick to check if its baked well. 
  13. Once removed from the oven, allow the cake to cool down in the same tray for 30 minutes. 
  14. After that take a plate and place the baking pan upside down onto the plate and tap very slowly so that the cake gets transferred to the plate.
  15. The pear slices will be all on top as seen in the picture.
