Ingredients:
- Raw rice - 1 cup
- Grated coconut - 3/4 cup
- Cooked rice- 1/2 cup
- Coconut water - 1/2 cup
- Water - for grinding
- Salt - to taste
- Yeast - 1/4 tsp
Preparation:
- Soak the rice for 6 hours.
- Now combine the rice, coconut, cooked rice, coconut water in a mixer grinder and grind to a fine paste. if required add some water, but the batter should be slightly thicker than that of dosa.
- Soak the yeast in warm water and keep aside for 5 mins.
- Add the yeast and the water to the batter and mix well.
- Set the batter aside overnight for it to rise.
- When about to prepare appam, add salt to taste and mix well.
- Place the appam pan on the flame. when it becomes slightly hot, pour 1 big spoon of the batter and rotato to make a circle.
- Cover with a lid and cook for 2 minutes. You will notice small holes all around once it is done.
- Repeat the same process and make more appams.
- Server hot with channa curry/potato stew/chicken curry etc.
