Ingredients:
- Maida/All purpose flour - 1cup
- Melted Butter - 3/4 cup
- Powdered Sugar - 1 cup
- Vanilla Essence - 2 tbsp
- Baking Powder - 1 & 1/2 tsp
- Baking Soda - 1 tsp
- Salt - 1 pinch
- Corn Flour - 2 tbsp
- Raisins - 20 nos.
- Cashewnut - 10 - 15 nos.
- Robusta Banana (ripe) - 4 nos.
Preparation:
- Sieve together maida, corn flour, baking soda, baking power and pinch of salt several times, so that they get mixed well. Keep it aside.
- In another bowl, smash the banana well. to this add powdered sugar, melted butter, vanilla essence and mix well.
- Roll the raisins and cashewnut pieces in some maida and add to this mixture. Rolling the dry fruits in maida allows it to stay on top.
- Now keep adding small portions of the maida mixture to the banana mixture and just fold the batter. Be gentle while mixing. Repeat the same for the entire maida mixture.
- Take the muffin mould. Place the muffin paper cups in each mould.
- Now fill 3/4th of each mould with the mixture.
- Preheat the oven to 180 - 200 degree centigrade.
- Place the muffin mould in the oven and cook for 25 to 30 minutes.
TIP: use a toothpick to check if the muffins are done. Insert the toothpick into the muffin and while removing, the toothpick should come out clean.
